Prep the carrots. Finely grate your carrots, then squeeze them in a clean towel to remove excess moisture.
This keeps the bites from getting soggy.
Pulse the nuts and oats. In a food processor, pulse walnuts or pecans with rolled oats until they form a coarse, sandy texture. Don’t overprocess into a paste.
Add the flavor base. Toss in pitted dates, cinnamon, nutmeg, vanilla, and a pinch of sea salt. Process until the mixture starts clumping together.
Bind and balance. Add cashew or almond butter and a little maple syrup or honey if you want them sweeter.
Pulse again until the dough is sticky and cohesive.
Fold in the fresh elements. Add the shredded carrots, shredded coconut, and raisins (if using). Pulse just a few times to combine, or scrape into a bowl and mix by hand.
Adjust texture. If the mixture is too wet, add a bit more oats or coconut. If it’s too dry, add a teaspoon of nut butter or a splash of water.
Roll the bites. Scoop tablespoon-sized portions and roll into balls.
If sticky, lightly dampen your hands or chill the dough for 10 minutes first.
Coat if you like. Roll each bite in coconut flakes or finely chopped nuts for extra texture and a clean finish.
Chill to set. Place the bites on a tray and refrigerate for at least 30 minutes. They’ll firm up and taste even better.
Serve and store. Enjoy right away, or keep them chilled for grab-and-go snacks all week.
